Haven Gastropub Introduces New Menu of Classic Cocktails

Posted Tuesday, December 04, 2012 by Mona Shah
We've become known for our extensive beverage program, with an expansive craft beer selection and boutique wines, so we like to change up our bar offerings each sseason! This winter season, we're showcasing classic cocktails, created with traditional techniques, top-shelf spirits, and the purity of fresh ingredients.

The beauty of these new bar offerings are their classic approach. Wil Dee, Managing Partner & Beverage Director, avoided the trendy infusions and focused on lesser known, yet remarkable spirits, and interesting, quality ingredients to make each drink shine on its own.

Following are the new specialty cocktails created by Wil Dee, in conjunction with the restaurant bartenders:

Smokin’ Scotch
La Puritita Mezcal, Grand Marnier, house-made sweet & sour, smoked salt

One Ninety Manhattan
Bulleit Rye, Carpano Antica vermouth, Angostura bitters

Bloody Haven
Hangar One Chipotle, house-made bloody mary Mix, salt rim

Falling Down the Chimney
Snap gingersnap liqueur, Cherry Herring, stout

Classic Cocktails
Sazerac
Kübler Absinth rinse, Old Overholt Peychaud’s bitters

Americano (pictured above)
Campari, Carpano Antica vermouth, soda water

Pisco Sour (pictured below)
Oro Pisco, house-made Sweet & Sour, egg white, Angostura bitters

Haven Brewing Debuts Milestone Collaboration with Stone Brewing Co. | Black Friday, November 23rd

Posted Tuesday, November 20, 2012 by Mona Shah
“HELL RYED TO HAVEN” on tap Friday, November 23rd at Haven Gastropub +Brewery, Haven Gastropub & taco asylum!

Haven Brewing
and Stone Brewing Co. debut Hell Ryed to Haven, a milestone collaboration beer, on Friday, November 23rd at Haven Gastropub +Brewery in Pasadena, Haven Gastropub in Orange and taco asylum in Costa Mesa. The brew, a black rye IPA, was created with New Zealand hops by Haven Brewing Brewmaster Dave Larsen and Stone Brewing's Steve Gonzales, with the intent to be different from anything either breweries have in their catalogs.

Hell Ryed to Haven
Black Rye IPA | ABV – 6.23%
IBU – 78 | SRM – 52.8 | pH – 4.65
Hops – New Zealand Motueka and Green Bullet

This Black Rye IPA is a beer you can smell when you’re standing a foot away from your glass. It’s dry hopped with 11 pounds of New Zealand Motueka, a hop that really shines through. As suggested by its style name, this beer is black in color with a medium body. Although it’s hopped like an IPA, it has a clean, roasty finish.

The release of Hell Ryed to Haven marks the first time San Diego-based Stone Brewing Co. has collaborated with a Los Angeles area brewery. The brew was crafted in the on-site brewery of Haven Gastropub +Brewery in Pasadena, where Haven Brewing produces its small-batch, house-crafted beers.

“It was great to work with Steve Gonzales, who is Stone’s Research, Small Batch and Barrel Manager,” said Brewmaster David Larsen, who, earlier this year, was invited to showcase Haven Brewing at the Stone 16th Anniversary festival. “Steve’s experience with experimental beers made it exciting to work with him on this collaboration."

Haven Brewing currently has 12 house-produced beers in its catalog, led by the very first beer released in March 2012, "Hello World," an American Pale Ale (6.3% ABV).

“It’s really a great feeling to take water, grains, and hops, and make it into something amazing that people will love,” added Larsen.

Haven Gastropub, Haven Gastropub +Brewery and taco asylum will offer this, and other Haven Brewing releases, as available on a weekly basis. For more information, please visit www.havengastropub.com.

Haven Brewing's Debut Year at the Great American Beer Festival

Posted Tuesday, October 09, 2012 by Mona Shah

The 31st Annual Great American Beer Festival is almost here! Beginning Thursday, October 11th, nearly 50,000 beer lovers, judges and brewers will gather at the Colorado Convention Center in downtown Denver for the largest commercial beer competition in the world!

If you didn't know, 97% of today’s 2,100+ U.S. breweries are small and independent craft brewers, so the majority of breweries at any beer festival are craft. What makes GABF so cool is that both small and large brewers serve side by side and compete head to head in the blind competition!

This year's event is SOLD OUT, but if you have tickets, be sure to stop by the Haven Brewing booth to see Brewmaster David Larsen, and Haven Gastropub +Brewery Executive Chef Greg Daniels, Managing Partner/Beverage Director Wil Dee, and Partner Ace Patel, who will be at the festival this weekend!

Haven Brewing will have 10 beers entered this year and following are descriptions of each:

Hafen Hefe
Bavarian-style hefeweizen
ABV – 5.0%
IBU – 13.5
SRM – 3.9
Hops – Hallertau
Yeast - Weihenstephan
Description:
A Bavarian-style hefeweizen, with just the smallest hint of banana, and a clove and citrus backbone. It is a hazy hay-colored hue, and the finish is clean. It is with Bohemian floor-malted grains in one of the last Czech Republic Bohemian-style malting plants; floor-malting is an old world process of germinating and drying malts. This process is done by hand and takes 3 to 4 days longer than newer, more industrial methods, giving you a pronounced robust and traditional feel and taste. Simply put, this is a great summer beer. The Germans would say “fur den Sommer” which means “for summer.” Enjoy with friends, on a grassy hill, all day long.

Brewmaster’s Breakfast
Oatmeal Stout
ABV – 7.5%
IBU – 86.5
SRM – 35
Hops – Centennial and Cascade
Yeast – American Ale
Description:
This stout is every thing breakfast; Oatmeal, Coffee bitterness, chocolate, toasty, roasty and a little smokey. This beer will stain your teeth like a cup of black coffee in the morning. Brewmaster’s Breakfast starts off with a thick, brown, smokey head, that you could scoop out with a spoon. The body is complex and robust, just enough to wake up your senses. The beer finishes dry and crisp, with west coast hops leaving you wanting more.

100 Rubles
Russian imperial stout
ABV – 12.0%
IBU – 75
SRM – 37
Hops – Galena, Northern Brewer and Centennial
Yeast – American Ale Yeast
Description:
This Russian imperial stout is extremely balanced, boasts a whopping 12% ABV, and has notes of bitter cocoa and coffee. The name comes from a law that Peter the Great enacted, in which you were allowed to keep your beard if you paid a beard tax of up to “100 Rubles.” Most brewers have beards at one point or another, including ours.

Sosigenes
Double IPA
ABV – 8.2%
IBU – 248
SRM – 9.6
Hops – Warrior, Glacier, Galena, Chinook, Columbus and Centennial
Yeast – American Ale Yeast
Description:
Sosigenes is most definitely a west coast style double IPA using all American malts and generously hopping with Warrior, Glacier, Galena, Chinook, Columbus and Centennial. The name Sosigenes comes fromSosigenes of Alexandria, who was credited by Pliny the Elder, as the astronomer consulted by Julius Caesar for the design of the Julian calendar (Leap Year). This occurred in 45 BC, the very first Leap Year. This beer was made on leap year day, February 29th 2012, hence the name. Also, we at Haven Brewing would like to point out that we think its pretty cool that Pliny the Elder named him. RESPECT

Hello World
American Pale Ale
ABV – 6.3%
IBU – 73
SRM – 14.4
Hops – Centennial, Warrior, Cascade and Columbus
Yeast – American Ale Yeast
Description:
Hello World is a well-balanced pale ale done in west coast fashion. This beer starts off with a slight hoppy nose and has a shiny copper color. The mouth feel is well-rounded, and the finish is smooth and easy drinking. This is the first beer brewed by Haven Brewing. The name comes from computer programming. When a new program is written the first line displayed is “Hello World.” We at Haven Brewing thought it was pretty fitting for our very first beer. HELLO WORLD!

Gross National Happiness
Cream Ale
ABV – 5.0%
IBU – 20
SRM – 5.2
Hops – Summit and Tettnager
Yeast – American Ale Yeast
Description:
Gross National Happiness or (GNH) as we like to call it, is made with 110 Pounds of Heirloom Bhutanese Red Rice. This beer has a golden wheat hue and is an easy drinking beer - perfect for the hot days of summer. The name “Gross National Happiness” comes from the kingdom of Bhutan. It is one of the last countries where the monarch ruled, and the kingdom has remained blissfully untouched by the outside world. This has very recently given way smoothly to a democratic government, when the ruling king himself asked for this change. This and many such anecdotes show the very different thinking of the people of this exquisite county where GNH (Gross National Happiness) is considered important, and not the GDP (Gross Domestic product) of the county.

upRYEsing
Rye IPA
ABV – 6.5%
IBU – 81
SRM – 17
Hops – Columbus, Centennial and Cascade
Yeast – American Ale Yeast
Description:
upRYEsing is made with 21% rye and is an IPA. It has a bready, hoppy finish and has a reddish tint. This beer will please any hophead out there.

Diana Brown
American brown ale
ABV – 6.5%
IBU – 28.3
SRM – 22
Hops – Columbus, Nugget, and Willamette
Yeast – American Ale Yeast
Description:
A malty American brown ale with notes of hazelnut, cocoa powder, and finishing dry with flavors reminiscent of old fashioned root beer barrel candies. The beer was named after David’s Mom, Diana Brown.

Lion’s Share Series
100 Rubles on Oak

Russian imperial stout
ABV – 14.0%
IBU – 75
SRM – 50
Hops – Galena, Northern Brewer and Centennial
Yeast – American Ale Yeast
Description:
This imperial stout has been aged in a American white oak Barrels for 3 months and 12 days. It is boozy, oaky, and you will be lucky if you get some.

Lion’s Share Series
Brewmaster’s Breakfast on Oak

Oatmeal Stout
ABV – 9.5%
IBU – 86.5
SRM – 50
Hops – Centennial and Cascade
Yeast – American Ale
Description:
This robust stout has been aged in a American white oak barrels for 3 months and 12 days. It is oaky, bitter, smoky, and toasty, with hints of vanilla and marshmallow.
